South-West France at CHECA

For one evening, we’re heading to the South-West of France.

This time there is no fusion concept. We simply wanted to cook the kind of food we love from this part of France — generous, regional dishes built around foie gras, truffle, duck confit, Toulouse sausage, cèpes and plenty of good jus.

The evening takes inspiration from Périgord, Toulouse and Bordeaux, three places with some of France’s strongest food traditions.

Expect small and medium dishes throughout the evening, so you can come for a glass of wine and a couple of plates, or stay and work your way through the menu.

The menu

Foie Gras & Truffle Cromesquis
Crisp fried bites with a rich, melting foie gras and truffle centre.

Pommes Anna with Truffle Emulsion
Thin layers of potato cooked until golden and crisp, served with a smooth truffle emulsion.

Duck Confit Hachis Parmentier
Slow-cooked duck confit topped with creamy potato and finished with a rich jus.

Toulouse Sausage, Cèpes & Pommes Sarladaises
Traditional Toulouse sausage served with meat jus, porcini mushrooms and potatoes cooked in the Sarladaise style.

Bordeaux Canelé
The classic pastry from Bordeaux — deeply caramelised on the outside, soft and custardy in the centre.

Bordeaux in the glass

The food of South-West France deserves wine from the region too.

For the evening, we will be pouring Bordeaux wine, chosen to work with the richness of duck confit, Toulouse sausage, mushrooms and jus.

From the first glass to the last plate, the idea is simple: generous regional food, good wine and a relaxed evening at CHECA.

And because this is still CHECA, the bar will of course be pouring Pisco Sours too.

One night in South-West France

A little trip through Périgord, Toulouse and Bordeaux, without leaving Södermalm.
